Besides several other good things today, I came up with another yummy meal. Since I had steak salad today, and had just finished running, I really didn’t want anything hot. I had lettuce, leftover jasmine rice, a papaya, some coconut shavings, assorted seeds, and other basic things.
Well, I first made tropical salad with butter lettuce, coconut shavings, almonds, sunflower seeds, and miso ginger vinaigrette. Then, I made a light sauce with coconut oil, rice vinegar, and some sugar, heated it up and threw it in with the rice and chopped papaya, then added some sesame seeds. Next time, black sesame seeds would be better.
Voila! Tropical yumminess. Light, cool, refreshing, and healthy!
