Drying up

Oh, let the dehydrating frenzy begin! I had an eggplant that needed to be used, and a mandolin slicer calling my name. I found a recipe for eggplant bacon, and it was all over from there. So, I sliced up the eggplant, marinated it, and put it in. I also took 2 white carrots that I wanted to preserve and dried them too.
